Tagliolini are about 2 to 3mm wide, a thinner variety of tagliatelle pasta. Long, paper-thin, and cylindrical in shape, tagliolini cook to a perfect al dente in about a minute and a half.

Due to the shape and porosity, this pasta is best served with smooth sauces (such as white truffle sauce, carbonara or other cream sauces). It is also delicious tossed with fresh sautéed vegetables and olive oil, or brown butter and fresh herbs.
