Pampanella Molisana (Molise Spicy Roast Pork)
Ingredients
- 2 pounds pork (preferably pork shoulder or ribs)
- 2 tbsp sweet paprika
- 1 tbsp hot paprika (optional, for spice)
- 3 cloves garlic, minced
- 2 tbsp white wine vinegar
- Salt, to taste
Instructions
- Rub the pork generously with paprika, minced garlic, salt, and white wine vinegar. Let it marinate for at least a few hours (overnight for best results).
- Preheat the oven to 325°F (160°C). Place the pork in a baking dish, cover with foil, and roast for about 2.5 to 3 hours until tender.
- Remove the foil for the last 30 minutes to allow the meat to develop a rich, flavorful crust.
