The company was founded by Chad Nelan in 2013 while he was working as a butcher. He started developing recipes and testing them in his basement, where he fell in love with the art of charcuterie. He taught himself about fermentation and classic techniques and developed unique flavors that were different from, but still honored, European traditions.

We develop unique recipes and flavor profiles using the highest quality spices and humanely raised heritage breed pork. We are committed to sourcing 100% heritage breed pork, which is humanely raised on a vegetarian diet, antibiotic-free, hormone-free, and free from synthetic nitrates.
