Ibores is a semi firm goat’s milk cheese that has been rubbed with smoked pepper from the region of Extremadura in southwestern Spain. It has a silky texture and a clean finish, picking up hints of grass and earth, which reflects its homeland. The paprika gives the cheese a little peppery and slightly salty flavor. The firm white paste is rich with aromas of broom, lavender and thyme, while the copper-colored pimenton rind imparts warmth to the cheese’s tangy finish.
