The small albacore tuna are caught using traditional methods – yes fishing rods by fishermen pulling them in one by one – this keeps the flavor and texture of the tuna at its best. They are poached in seawater and packed by hand and topped with olive oil, which in most cases is arbequina. The olive oil preserves the flavor and silky texture of the fish.
