Quinoa and Vegetable Soup

Ingredients
  

  • 1 L vegetable stock
  • 1 carrot
  • 1 onion
  • 1/2 courgette
  • 1/2 leek
  • 1 celery stick
  • 100 gr quinoa
  • salt to taste
  • pepper to taste
  • cumin  to taste
  • 1/2 tbsp turmeric
  • chopped parsley to taste
  • 40 gr olive oil

Instructions
 

  • Wash the vegetables and cut into small portions.
  • Wash the quinoa, under cold water.
  • Gently fry the vegetables in a large pan with the olive oil then add the quinoa and spices.
  • Add the stock then bring to a boil for 10/15 minutes.
  • Decorate with chopped parsley. Enjoy!
