Kim’s Incredible Chocolate Chip Cookies

This is an old Gottlieb family recipe that my mother gave me permission to share. I hope that you enjoy it as much as my family has for generations, and everyone we share them with has. I typically make this recipe with a mix of chocolate chips and raisins (my family’s favorite way) – however, the dough is the perfect base for just about any add-ons you like (chocolate chips, raisins, craisins, butterscotch chips, health bar bits, etc.). Always delicious!

Ingredients
  

  • 1 cup vegetable shortening
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 tsp vanilla extract
  • 2 tbsp water
  • 2 eggs
  • 1-1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cups oats
  • 12 oz semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 375°F degrees.
  • Either grease a cookie sheet or line it with parchment paper (whichever you prefer – I tend to just give the sheet a light spray with a cooking spray).
  • With either a stand mixer or electric hand mixer (or a fork if you have neither) –cream together the shortening and sugar until it is smooth.
  • Add the water, eggs, and vanilla, beat until well combined.
  • Add the flour, baking soda, and salt and mix until combined.
  • Add the oats and mix until combined.
  • Carefully stir in the chocolate chips (or whichever add-ins you prefer).
  • Using a small cookie scoop or spoon, roll the dough into cookie balls approximately1” in diameter.
  • Bake for about 13 minutes or until the edges turn light brown.

Notes

I typically make this recipe with a mix of chocolate chips and raisins (same amount of chocolate chips listed above with an added ½ cup or so of raisins) – this dough is the perfect base for any add-ons you like (chocolate chips, raisins, craisins, butterscotch chips, health bar bits, etc.). Always delicious!
