Ingredients
  

  • 12 ounces semisweet chocolate chips
  • 1 tbsp  coconut oil
  • 1/4 tsp vanilla extract
  • 16 ounces regular-size marshmallows
  • 20 4 in. lollipop sticks

TOPPINGS

  • 1/2 cup white chocolate chips or butterscotch chips
  • Rainbow sprinkles
  • Roughly chopped peanuts
  • Crushed pretzels
  • Crushed candy canes or peppermint candy
  • Finely crushed chocolate sandwich cookies (such as Oreos)
  • Flaky salt

Instructions
 

  • Assemble a dipping station: Place lollipop sticks in a glass or coffee mug. Pour marshmallows into a large bowl. Line a baking sheet with parchment paper.
  • Make chocolate mixture: Place chocolate chips, coconut oil, and vanilla extract in a microwave safe bowl. Microwave on HIGH in 20-second increments until chocolate is melted and smooth. 
  • Dip marshmallows: Secure 1 marshmallow on the end of each lollipop stick. One at a time, submerge each marshmallow in chocolate to coat. Allow excess chocolate to drip away, and then place marshmallow, flat side down, on the baking sheet. Immediately sprinkle with toppings, if using. 
  • Chill to harden chocolate: Once all marshmallows have been dipped, chill until chocolate sets, about 20 minutes.
