Instructions
Assemble a dipping station: Place lollipop sticks in a glass or coffee mug. Pour marshmallows into a large bowl. Line a baking sheet with parchment paper.
Make chocolate mixture: Place chocolate chips, coconut oil, and vanilla extract in a microwave safe bowl. Microwave on HIGH in 20-second increments until chocolate is melted and smooth.
Dip marshmallows: Secure 1 marshmallow on the end of each lollipop stick. One at a time, submerge each marshmallow in chocolate to coat. Allow excess chocolate to drip away, and then place marshmallow, flat side down, on the baking sheet. Immediately sprinkle with toppings, if using.
Chill to harden chocolate: Once all marshmallows have been dipped, chill until chocolate sets, about 20 minutes.
