Pampanella Molisana (Molise Spicy Roast Pork)

Ingredients
  

  • 2 pounds pork (preferably pork shoulder or ribs)
  • 2 tbsp sweet paprika
  • 1 tbsp hot paprika (optional, for spice)
  • 3 cloves garlic, minced
  • 2 tbsp white wine vinegar
  • Salt, to taste

Instructions
 

  • Rub the pork generously with paprika, minced garlic, salt, and white wine vinegar. Let it marinate for at least a few hours (overnight for best results).
  • Preheat the oven to 325°F (160°C). Place the pork in a baking dish, cover with foil, and roast for about 2.5 to 3 hours until tender.
  • Remove the foil for the last 30 minutes to allow the meat to develop a rich, flavorful crust.
  • Serve hot with fresh bread or alongside a glass of Molise wine!
