Rub the pork generously with paprika, minced garlic, salt, and white wine vinegar. Let it marinate for at least a few hours (overnight for best results).
Preheat the oven to 325°F (160°C). Place the pork in a baking dish, cover with foil, and roast for about 2.5 to 3 hours until tender.
Remove the foil for the last 30 minutes to allow the meat to develop a rich, flavorful crust.
