Ingredients
  

  • 1 lb tomatoes sliced
  • 1 cucumber peeled and sliced
  • 1 red onion sliced thin
  • 12 Parnon Estates Kalamata Olives
  • 1 long pepper (light green) sliced thin
  • 6 pepperoncini peppers
  • ½ cup crumbled feta cheese
  • 1 tsp Parnon Estates oregano
  • salt and pepper to taste
  • Parnon Estates Greek Olive Oil to taste
  • Parnon Estates Wine Vinegar to taste

Instructions
 

  • In a large saladbowl toss the tomatoes, cucumber, red onion, and green pepper.
  • Sprinkle with oregano, salt, and pepper (to taste).
  • Mix well and drizzle with olive oil and vinegar (in equal amounts) over the salad.
  • Toss lightly.
  • Garnish with Kalamata olives, pepperoncini, and crumbled feta cheese.

Notes

Makes for a super lunch served with crusty bread and a glass of white wine!
