Bovine & Swine offers a thoughtful and delicious selection of meats, all masterfully hand-crafted in Jackson Hole, Wyoming. Since 2016, Bovine & Swine has been combining local and regional meats with traditional techniques, reminiscent of butchers of the past, to create hand-crafted sausages and natural cased all beef hot dogs with the perfect “snap,” flavor, and ingredients. On a mission to find the very best cured meats, Chef Joel Tate and Fine Dining Restaurant Group owner Gavin Fine founded the USDA-certified, craft sausage company Bovine & Swine. With the exception of their tasty Beer Brat, Bovine & Swine’s diverse sausage lineup is certified all natural and gluten free.
SAUSAGE OPTIONS:
-Jalapeño & Cheddar – There are certain flavor combinations that are undeniably irresistible—jalapeño and cheddar are one of them. These jalapeño cheddar sausages made by sausage maker Bovine & Swine are cheesy, spicy, and slightly sweet – absolute perfection!
Ingredients: Pork, Beef, Water, Pasteurized Processed Cheddar Cheese (Cheddar Cheese [Cultured Milk, Salt, Enzymes], Water, Cream, Sodium Phosphates, Salt, Beta Carotene [color]), Natamycin (preservatives), Dendritic Salt, and less than 2% of: Celery Juice Powder, Dried Glucose Syrup, Dextrose, Dried Jalapeño, Cherry Powder, Ground Mustard Seed, Onion Powder, and Other Spices.
-Black Pepper & Blue Cheese – These Black Pepper & Blue Cheese Sausages are an example of sausage maker Bovine & Swine’s more unconventional yet amazingly tasty creations. Reminiscent of a well-designed charcuterie board, these sausage links are peppery and pungently cheesy with natural blue cheese.
Ingredients: Pork Blend 85% Lean 15% Fat, Beef Blend 80% Lean 20% Fat, Water, Salt, Dried Glucose Syrup, Dextrose, Black Peppercorn, Sodium Tripolyphosphate, Mustard Seed Ground, Onion Powder, Cayenne Chili Pepper, Ginger, Sodium Erythorbate, Crumbled Blue Cheese, Ornua Blue Cheese, and Celery Juice Powder.
-Roadhouse Beer Bratwurst – These Roadhouse Beer Bratwursts bring together local Wyoming craft Roadhouse Beer with some of the best meat available to create a brand new summertime sausage classic. They feature hints of pickled mustard seed and caraway with the refreshing flavor of Roadhouse Brewing Company’s Wilson IPA.
Ingredients: Pork, Beef, Beer, Water, Dendritic Salt, Pickled Mustard Seeds (Mustard Seeds, Vinegar, Sugar, Water), and less than 2% of: Celery Juice Powder, Dried Glucose Syrup, Dextrose, Onion Powder, Cherry Powder, Dill Seed, Mustard, Caraway Seeds, Garlic Powder, Ground Ginger, and Chili Flakes.
-Andouille – Made with mouth-watering aromatics by sausage maker Bovine & Swine, these Andouille Sausages are smoky, spicy, and have a lovely sweet finish.
Ingredients: Pork, Water, Dendritic Salt, and less than 2% of: Celery Juice Powder, Dried Glucose Syrup, Dextrose, Cherry Powder, Hot Paprika, Spanish Paprika, Spices, Garlic Powder, and Ground Mustard.
-Pork, Bison, & Huckleberry – This sausage is a true ode to Jackson Hole where both huckleberries and bison are plentiful. Showcasing the amazing flavors of Wyoming, you’ll love the sweet and savory mix of these sausages. They feature earthy hints of mushroom with a slightly sweet and tart finish from the huckleberries.
Ingredients: All Natural, Nitrate Free, Bison, Por, Water, Huckleberry, Salt, Corn Syrup Solids, Dextrose, Celery Juice Powder, Cherry Powder, Black Peppercorn, and Other Spices. Gluten-Free.
-Thai Chicken – These Thai Chicken Sausages are an example of sausage maker Bovine & Swine’s more unconventional yet amazingly tasty creations. These sausage links feature notes of curry, ginger, lemongrass, cilantro, and kafir lime.
Ingredients: Chicken, Coconut Milk, Dendritic Salt, Red Curry Paste (Garlic, Dried Red Chili, Lemongrass, Shallot, Salt, Galangal, Shrimp Paste [Shrimp, Salt], Kaffir Lime Peel, Pepper), Brown Sugar, and less than 2% of: Cilantro, Fish Sauce (Anchovy Extract, Water, Salt, Fructose and Hydrolyzed Wheat Protein), Lemongrass, Celery Juice Powder, Ginger, Dextrose, Kaffir Lime Leaf, Lime Juice, Spices, and Hog Casing.
