Learn how to make classic Italian homemade pasta, Fettuccine and Maltagliati, in Rome! Discover all the secrets of crafting homemade pasta dough, from the flour to the cutting. Our professional chefs will show you the best techniques and explain the different cuts of pasta and which sauce is better for each type of pasta.
Your class will begin by teaching you the craft of making your own flour and egg pasta from scratch. The recipe you will learn can be used to craft a variety of pastas including tagliolini, pappardelle, fettuccine, and maltagliati (or “badly cut”). You will cut your own fettuccine and maltagliati and then you will choose the sauce for your pasta. We offer Amatriciana, Carbonara, Bolognese, Alfredo, and more.
Once the instruction has concluded, you will sit down and enjoy a typical Roman appetizer, bruschetta with tomatoes and basil, the homemade pasta you just crafted, and a glass of good Italian wine.
