SINCE 1605, ITALY’S OLDEST BALSAMIC VINEGAR PRODUCER

Since the seventeenth century, the Giusti family has been producing Balsamic Vinegar, passing down a recipe that creates a complex harmony of flavors and a product of excellence, appreciated all over the world.

Creating an exceptional balsamic vinegar depends on the competence, experience, attention to detail and the lengthy period of aging. Proud of a know-how which has been refined over its 400 years family history, Giusti combines both its respect for tradition with a sense of local corporate responsibility and a modern and sustainable production philosophy.

 

THE GIUSTI FAMILY

More than four centuries have passed since our family ancestors initiated the first series of barrels of balsamic vinegar in the attics of our home in Via Farini. Today, Giusti balsamic vinegars enrich the dishes of the best chefs and decorate the shelves of the most exclusive shops in Italy and in the world. And it is thanks to the trust and loyalty of all of you who have followed us in this long history that still today we dedicate ourselves with passion and enthusiasm to the production and dissemination of this wonderful product, which has contributed to the great history of Modena.

 

SINCE 1605, AN UNINTERRUPTED STORY

1605: Registration of Giuseppe and Francesco Maria Giusti in the Modenese Duke’s ledger of local businesses “Salsicciai and Lardaroli”

1613: The Cardinal Barberini grants Giovanni Maria Giusti the right to sell his products in Bologna, part of the Papal territory.

1700: The “Gran Deposito Aceto Balsamico di Giuseppe Giusti “ expands with the inauguration of new series of barrels and through the acquisition of barrels from other Modenese families.

1861: The “A3” barrel was taken to Florence for the Italian Exposition organized by the Italian Royal Family, where Giuseppe Giusti was awarded a Gold Medal for a 90-year-old Balsamic Vinegar.

1863: Giuseppe Giusti presents the “Giusti Recipe”, the first document that describes how to obtain a “Perfect Balsamic Vinegar” at the Agricultural Exhibition of Modena.

1873-1900: Giusti participates in the Universal Expositions of the late 19th century, from Paris to Antwerp, obtaining diplomas and numerous awards for its Balsamic Vinegars.

1900: The logo of Giusti family is a calligraphic illustration in liberty style surrounded with decorations and medals. The same logo is still used today.

1910: The shop, opened in the early seventeenth century becomes the Renowned Salumeria Giusti, which still remains today a reference point for gourmets and local excellences.

1920: The retail trade grows and Giusti begins to bottle the Balsamic Vinegars in the most glass bottles produced in the area, those for the locally produced Lambrusco wines.

1929: Giusti becomes the official supplier to the King of Italy and the Royal House of Savoy, awarding Giusti the privilege to use the royal emblem on Giusti Balsamic Vinegars.

1980: Acetaia Giusti moves from the attics of the Salumeria to a cottage in the Modena countryside, opening its doors to fans from all over the world.

2018-2022: Giusti Museum and the Botteghe in Modena, Milan and Bologna are open. New spaces dedicated to the history of the Giusti brand for passionate from all over the world.

 

THE ANCIENT AGEING BARRELS

It is in the wood of the ancient ageing barrels that the secret of the Balsamic Vinegar is hidden. Owning an Acetaia was and is therefore a real family heritage. Between the 1700s and the early 1900s the “Gran Deposito Aceto Balsamico di Giuseppe Giusti” expanded by starting new batteries of barrels and acquiring them from other Modenese families. These are the same barrels in which Giusti vinegar still ages today, lovingly cared for from generation to generation. The older the barrel, the better the product will be obtained, since it will always better release the essences of the wood and the balsamic aromas that have stayed there over the years.

 

MEDALS COLLECTIONS

Over the centuries, thanks to travels in Italy and Europe, Giusti Balsamic Vinegars have received numerous awards and recognition for the goodness of this product. Among the most representative, the 14 gold medals obtained at the Great Exhibitions of late 1800s. Due to their historical value and relevance, the medals are still part of Giusti’s iconographic heritage, appearing on labels designed at the beginning of the twentieth century.

 

THE ROYAL SEAL OF APPROVAL

The quality of Giusti Balsamic Vinegar conquered not only the Italian and European audience, but also the King of Italy Vittorio Emanuele III, who granted in 1929 the high title of “Supplier of the Royal House of Savoy”, conceding to Giusti the privilege of displaying the Royal Seal of Approval. It is still incorporated on all Giusti Balsamic Vinegars bottle as a symbol of the iconographic heritage of the brand.

 

THE GIUSTI RECIPE

Following the centuries of an oral tradition, Giuseppe Giusti was among the first to write down the rules for obtaining a “perfect Balsamic Vinegar”. His text, written down in 1863 on the occasion of the Modena Agricultural Fair, teaches us that the choice of grapes, the quality of the casks, and time are the fundamental ingredients. The quality of the raw materials, the long aging time required, and above all the availability of casks that have been aging Balsamic Vinegar for centuries already are the elements that still make Giusti Balsamic Vinegar so precious.

 

4 CENTURIES OF KNOW-HOW

Obtaining a great balsamic vinegar depends on the competence, experience and taste of its maker. Not only a careful selection of the grapes, but also the cooking system and above all the great complexity of the ageing process, with casks of various woods and sizes. These are the factors that the “maestro acetiere” needs to manage to obtain a great result. Not to forget time, an important element for course of the natural processes. A family art, maintained throughout generations, which seals the quality and taste of a product capable of defying time.

 

GIUSTI IDENTITY

The Giusti Balsamic Vinegar label was born, in the early twentieth century, from a new need: to sell the product bottled instead of in bulk. As the calligraphic logo reproduced with lithographic stone, even the label reflects the typical taste of the time. In fact, Liberty styles can be seen, and the use of different characters for the different wordings. Thus, the name of Giuseppe Giusti is written, as a signature, with a different character from that of the logotype. This label, to which the company has always wanted to remain faithful, has gone through decades and changes remaining identical to itself, and becoming a real iconic and recognizable object among all.

 

GIUSTI MUSEUM

The Giusti Museum offers an extraordinary journey through a priceless collection of objects and documents preserved for generations: from the ancient jars used for conservation, to the tools used over the centuries by vinegar makers, up to the first bottles and advertising leaflets of the early twentieth century. Among the most precious memorabilia are centuries-old casks, such as the “A3” cask, presented in Florence in 1861 during the Italian Exhibition announced by the Italian royal family, winner of a gold medal for its 90 years old Balsamic Vinegar. Through documents and ancient objects, the Museum traces the history of Balsamic Vinegar and its connection with the Giusti family.
