This cut is best oven roasted or smoked. When cooking a ribeye roast, the goal is to achieve a flavorful browned crust on the surface, without overcooking the tender meat within. The best way to do this is to cook at a high temperature at the beginning or end of cooking, but a lower temperature for the rest of the time.
Once the internal temperature of the meat reaches 130 degrees Fahrenheit, remove the roast, and allow it to rest for 20 to 30 minutes, during which time the juices of the meat will resettle and the temperature will rise to 135 degrees for medium-rare.
Overcooking a ribeye roast will cause the meat fibers to tighten and result in tough meat.

PLEASE NOTE: To ensure quality, all butcher shop orders ship Monday, Tuesday, and Wednesday only. Orders placed on a different day will ship the following Monday. If you need it sooner, please contact us for expedited shipping.
Shipping costs start at $60.00 for up to 15 pounds of meat within the contiguous United States. Shipping to Alaska and Hawaii is an additional $50.00 fee. Every 10 pounds of meat over the initial 15 pounds will be an additional $30.00.
