Our smoked Cheddar is naturally smoked by using a blend of apple, cherry, and hickory wood chips. To create this savory cheese, we place our Farmhouse Cheddar into our on-site smokehouse and let the smoke penetrate deeply into the cheese. This process adds a distinct caramel color and supple leathery texture to our hearty cheddar. This semi-hard cheese is made from pasteurized cow’s milk and hand cut into 10-pound, 5-pound, or retail sized pieces before smoking.
Fiscalini Farmstead started as a dairy farm over 100 years ago, established in 1914. Today the fourth generation owns and operates the business, and continues a way of life that respects, preserves and honors the animals, the land, and resources. All of their cheese is made with milk that comes only from their cows on their dairy, which is located just 30 feet from their cheese plant.
