Ingredients
- 3 cups cooked chicken, shredded
- 6 cups chicken stock
- 3 cups all purpose flour
- 1 tbsp baking powder
- 2 tbsp cold butter, cubed
- 1 cup buttermilk
- 1 tsp salt
Instructions
- Pour the chicken stock into a large pot over low heat and warm it up while you make the dumplings
- In a large bowl, combine the flour, baking powder, and salt. Cut the butter into the dough using a pastry cutter or fork. Then, pour the buttermilk into the bowl and mix until a shaggy dough forms.
- Turn the dough onto a lightly floured surface and roll to about 1/4 inch thick. Use a pizza cutter to cut the dumplings into 1-2-inch squares.
- Bring the broth to a boil and add in the dumplings, a few at a time, stirring to make sure they don’t stick together. Cook for about 20 minutes, then add the chicken and cook for another 5-10 minutes. Serve right away and enjoy!
