Chocolate-Covered Marshmallows
Ingredients
- 12 ounces semisweet chocolate chips
- 1 tbsp coconut oil
- 1/4 tsp vanilla extract
- 16 ounces regular-size marshmallows
- 20 4 in. lollipop sticks
TOPPINGS
- 1/2 cup white chocolate chips or butterscotch chips
- Rainbow sprinkles
- Roughly chopped peanuts
- Crushed pretzels
- Crushed candy canes or peppermint candy
- Finely crushed chocolate sandwich cookies (such as Oreos)
- Flaky salt
Instructions
- Assemble a dipping station: Place lollipop sticks in a glass or coffee mug. Pour marshmallows into a large bowl. Line a baking sheet with parchment paper.
- Make chocolate mixture: Place chocolate chips, coconut oil, and vanilla extract in a microwave safe bowl. Microwave on HIGH in 20-second increments until chocolate is melted and smooth.
- Dip marshmallows: Secure 1 marshmallow on the end of each lollipop stick. One at a time, submerge each marshmallow in chocolate to coat. Allow excess chocolate to drip away, and then place marshmallow, flat side down, on the baking sheet. Immediately sprinkle with toppings, if using.
- Chill to harden chocolate: Once all marshmallows have been dipped, chill until chocolate sets, about 20 minutes.
