Quinoa and Vegetable Soup

Ingredients
- 1 L vegetable stock
- 1 carrot
- 1 onion
- 1/2 courgette
- 1/2 leek
- 1 celery stick
- 100 gr quinoa
- salt to taste
- pepper to taste
- cumin to taste
- 1/2 tbsp turmeric
- chopped parsley to taste
- 40 gr olive oil
Instructions
- Wash the vegetables and cut into small portions.
- Wash the quinoa, under cold water.
- Gently fry the vegetables in a large pan with the olive oil then add the quinoa and spices.
- Add the stock then bring to a boil for 10/15 minutes.
- Decorate with chopped parsley. Enjoy!
